When it comes to the quality of coffee, water activity plays an important role. Water activity (= aw; simplified as the presence of water in green coffee) is measured by determining the water vapour pressure in a substance (= green coffee) and comparing it with the vapour pressure of pure water at the same temperature.
In coffee, water activity influences taste, aroma and health. Too much water in green coffee promotes the formation of bacteria, yeasts and moulds - and you don't want any of that in your cup. For quality assurance purposes, the SCA has therefore defined that the water activity of Specialty Coffee must not exceed 0.70 aw.
The Lighttells AW-600 Water Activity Analyzer measures the water activity reliably and precisely. There are 2 variants of measurements: The quick measurement (duration: approx. 6 minutes) and a detailed measurement (duration: approx. 12 - 60 minutes). The handy device is very robust and easy to use. It is ideal for coffee producers, roasters, people in the coffee trade and quality control of coffee.
