Profile
The coffee is mild, round and balanced. It has a soft, pronounced body and little acidity, but a pronounced sweetness. Notes of milk chocolate, hazelnut and spices.

Preparation Methods
Brazilian natural Santos can be drunk single origin or as the basis of blends.
Its balance and pronounced sweetness make it perfect for espresso, café crème or cappuccino coffees. It is also very pleasant and full-bodied in the French Press and in the Bialetti espresso maker - both with notes of nut and chocolate.
Origin
In the southeast of Brazil lies the state of Minas Gerais. Here lies one of the best-known and most traditional coffee-growing regions: Sul de Minas. 30% of Brazilian coffee grows here, because the mild climate with an average temperature of 23°C is perfect for sun-ripened, aromatic Arabica. As most Brazilian coffee is exported from the port of Santos, the term Santos is often used as a proxy for Brazilian coffee with its typical sweet flavour profile of chocolate and nut. However, it says nothing about the quality of the coffee.
From the village of Boa Esperanca in Sul de Minas, comes this naturally processed Catuaí, Mundo Novo and Topázio. It is produced by the Dos Costas cooperative. Dos Costas is a cooperative of several coffee farming families. It was founded in 1989 so that small family farms could continue to secure their livelihoods by growing and selling coffee in the face of the increasing dominance of large farms.
Dos Costats' mission: to work for the well-being of the cooperative members and their families while ensuring the highest quality coffee and a particularly sustainable, organic cultivation of the land.
In 2008, the cooperative received FLO Fairtrade certification after a three-year process. In addition to fair working conditions, the focus is also on environmental protection and the land is farmed organically and sustainably - unfortunately still a rarity in this region.
For a continuously high coffee quality, many of the members of Dos Costas take part in annual quality trainings and work with agronomists throughout the year.
We are convinced by Dos Costas' philosophy and the result: a balanced coffee with milk chocolate, hazelnut and spice notes.
Roasting recommendation for Brazil natural Santos
We recommend a medium to dark (full city) roast to accentuate the chocolaty, nutty notes.

Density does not match with my measurement
I've measured the density at home and for me I got 780g/l. On the page it says 708. I've changed the profile on my KL to 2000 - 2700 meters, even though the coffee is grown at around 900m. Hope to get good results.
